The winery is located in the Danube-Swabian municipality of Dewetsch (ung. Pécsdevecser) in the south of Hungary. It was founded in 2002 by Ralf Waßmann, a beverage technologist trained in Geisenheim, who runs the winery together with Susann Hanauer. The vineyards cover two hectares of vines on the southern slopes of the Siklós district in the Villány wine-growing region. They are planted with the white wine varieties Olaszrizling (Welschriesling) and Chardonnay, as well as with the red wine varieties Cabernet Franc, Cabernet Sauvignon, Kékfrankos (Blaufränkisch), Portugieser and Merlot. The winery was certified in 2003 as the first organic winery in Villány. Since 2011, the certified cultivation has been carried out according to the DEMETER or Biodynamic Viticulture guidelines. This includes the renunciation of pesticides and artificial fertilisers. Pest control is carried out, for example, by beneficial insects such as ladybirds, predatory mites, earwigs, lizards and birds, which are provided with a habitat and food through high biodiversity in the permanent cover crop and piles of stones and wood. With the exception of a small destemmer, no technology is used in the cellar. Fermentation is exclusively spontaneous with the vineyard's own yeasts. The wines are aged in steel tanks or in used barriques, depending on the style of wine. Apart from minimal use of sulphur, no additives are used. The wines thus correspond to the category "natural wines". All wines are certified according to the Hungarian guarantee of origin and quality "Districtus Hungaricus Controllatus Villány" (DHC Villány). In addition, the winery also carries out Méthode Traditionnelle (traditional wine-making). And Pét Nat (Pétillant Naturel) is also bottled. Since 2010, other wineries have been advised on the conversion to organic viticulture.
