At an altitude of 1,200 metres, the ARUNDA sparkling wine cellar in Mölten above Terlan (South Tyrol) produces 130,000 bottles a year, exclusively using the classic method. This is what has made the company so unique for over 40 years and also makes it the highest situated sparkling wine cellar in Europe.
Here on the Tschöggelberg, bottle fermentation begins in spring at the ideal temperature of 12° C and slows down in winter until the resting phase at approx. 10° C. The sparkling wine lies on the yeast for at least 30 months. But the quality of the sparkling wine begins with the suitable vineyard sites. The company always maintains close contact with the winegrowers who cultivate the classic grape varieties Pinot Blanc, Chardonnay and Pinot Noir at various altitudes. The base wines, which are later blended into cuvées and later present themselves as special sparkling wines with expression, come from these vineyards.
The sparkling wine cellar has had a new oenologist and managing director since 2023. As cellar master, Wolfgang Tratter has been responsible for viticulture and vinification in St. Pauls with great success and has also been responsible for the development of Praeclarus sparkling wine since it was incorporated.
Wolfgang and Sepp have known and appreciated each other for many years and enjoy mutual trust. In future, he will manage the Möltner bubbles in the spirit of its tradition and continue to develop it with his ideas and experience.
